Line 45: Starting the Introduction part of this paper with “because” is not appropriate. This can be done in between text but not at the beginning.
Line 50: There is need to recast the sentence in this line.
Nigeria, Ghana, Benin, Togo and Côted'Ivoire are part of African countries. Saying “…. African countries in general and Nigeria, Ghana, Benin, Togo and Côted'Ivoire, …” is not appropriate. Yo can say “In African countries, Nigeria, Ghana, Benin, Togo and Côted'Ivoire in particular, cassava roots are used …
Line 55: Starting a sentence with “which” is also not appropriate. Am the sure the sentence on this line is the continuation of the sentence in the previous line. It is better you brake the sentences up with a comma.
Line 60: remove the comma after “sieving”.
Line 72: Firm is an organisation involved in the trade of goods and services, or both while Industries are involved in the production of goods and services. Hence, the use of the word “firms” is not appropriate here. The ideal word to use is “industry”.
Lines 87-88: The sentence here is a repetition, it has already been stated.
Line 94: Is there anything like “family of different gari types”?
Line 98: … peeling of fresh cassava roots …
Line 106: It will be good to mention some of the names of the countries where hand graters are still in use.
Line 141: remove the comma after “marketing”.
Lines 161-163: The previous lines gave the information about the variability in the sensory characteristics of gari depending on the processes used and probably the target consumers` preference. These lines (161-163) is talking about inconsistency in gari quality. These lines should not be started with “This inconsistency in gari quality …” because there was no previous mention of any inconsistency in gari quality. I think the word “This” should be removed.
Line 165: More information should be provided on (1) the type of additives used, (2) At what point of the unit operation is temperature increased? Is it during fermentation or roasting of gari? and (3) Is there any undesired results from the use of additives and raising temperature on the gari? Please provide more information on these.
Lines 173-175: “postharvest storage of cassava roots before processing” should come before all other factors affecting sensory attributes of gari.
Line 178: remove the comma after “variety”.
Lines 184-185: The sentence here is not clear. Please recast.
Line 187-188: What “difference” are you referring to here?
Line 222: Remove the word “exists”.
Lines 230-232: There is need to state the percentage of soy inclusion.
Lines 239-240: “The scientific literature reports the following key findings on how processing influences gari quality”. The sentence seems incomplete.
Lines 308-309: … another study on the processing of improved varieties ….
Line 312: Remove the phrase “by hydrolysis” from the sentence because “hydrolysis has been previously mentioned.
Line 330-331: Remove the word “The” before “texture” and “eba” in the sentence.
Line 347-348: Different cassava products such as what? It is necessary to mention some.
Line 351: Composition of what? Sensory evaluation of what? You must be explicit.
