The aim of this study was to determine the sequence of reactivity of hydroxyl groups of quercetin using high-resolution mass spectrometry; Quercetin was silylated with MTBSTFA and analyzed with a QTOF-MS. MS/MS analysis generated product ions and the fragmentation pattern were defined.
