The article “Cooking does not impair the impact of pulsed electric field on the protein digestion of venison (Cervus elaphus) during in-vitro gastrointestinal simulation” discusses a trend topic and has special importance for the meat science, however, major issues makes publication difficult.

General comments

Bhat et al. was incredibly cited 16 times during the text. As it is a trend topic, excessive self-citation is not necessary.

English needs to be carefully revised.

Only two treatments were performed, one being the control. Why didn't you do more treatments by diversifying the processing parameters of the PEF?

Material and methods very poor explained and explored. Basically, you need to read Bhat's previous articles to find out how they did the analysis.

The results and discussion were poor explored. In addition, the discussion is weak, repetitive and inconsistent

Abstract

Line 2-3: When compared to the title, that first sentence becomes confusing.

Line 7: 75 °C for how long? Or was the cooking process interrupted when it reached 75 °C? Please explain.

Introduction

Line 19-21: Can this technology only be used in the future? Why not now?

Material and Methods

In general, very confused. What about heat processing?

Line 48: "Longissimus dorsi was procured"? I did not understand.

Line 63-64: At least comment on the main features.

Line 77-78: Only this? Explain.

Results and Discussion

Line 117: Food proteins?

Line 119-120: Repeated information.

Line 129-141: Paragraph too long and confusing.

Line 143-149: Explanation unnecessary in this section.

Line 149: “Possibly” by PEF treatment?

Line 153-154: Repeated information.

Line 155-158: Which bands?

Line 185-188: Repeated information.

Line 198-203: Citation please.

Line 206-210: There are countless times that you have repeated this information.

Line 213: "Higher mathematical values"?

Line 219-223: Does it affect or not affect the mineral content?

For these reasons, in my opinion, the manuscript does not meet the standard required for publication in International Journal of Food Science & Technology.
