Chilli paste is a very important product in Asia and, therefore, the subject of this review is interesting and should have an impact. Unfortunately, the paper is poorly written and, therefore, not suitable for publication.

The English language is rather poor throughout the manuscript.

When reading the Introduction, it seems that the rest of the manuscript will have a real clear focus. However, this is not the case. The reader finds very scarce information about some emerging technologies in general, without focusing on chilli products that do not contribute to knowledge. More than a review, some sections of the article are speculations/recommendations on what could be used in chilli instead of an actual review. Some recommendations are baseless. Some information on hurdles technologies are not focused on chilli products and is too general to contribute to knowledge in the field.

Information on chilli paste processing is very limited.

Some information is repeated in different sections of the report.
